Summer Munching: Quinoa and Feta Salad

Most people say that Breakfast is the most important meal of the day, and I must say I would agree with them to a point. Breakfast is one of the most overlooked meals of the day…however, that all for another day. All 3 main meals of the day are important, but today I want to talk to you about lunch. I am totally done for the day if I don’t have a good lunch. Friend and Family alike have suffered the grumpy Lotz that arrives when there is no lunchtime break with yummy food.

This is the first in a series of yummy treats that are perfect for Summer Munching. These are all prefect for Summer Picnics, Barbecues, Garden Parties and even Working Lunches. So…..lets get this series going………

This is one of my favourite Super Speedy Lunch Time Treats for One for you to try on this Sunny Saturday:

You will need:

1 portion of Quinoa (Today I am using a mix or Red and White Quinoa and Buckwheat), half a raw beetroot grated, 50g Feta, 1 chopped Spring Onion, the juice of half a lemon, and 2-3 sprigs of mint.

Now, I know 1 portion is not very specific, but I have brought countless bags of quinoa over the time, and they are all totally different. For this mix, 60g dry weight of mix needs 12 minutes of cooking, but others can be 50g dry weight and need 20 minutes of cooking. Some require rinsing, so need soaking over night….so please follow the instructions given on the pack.

So…..cook your quinoa as directed.

Once cooked, drain away any excess liquid. Whilst you are in the sink, blast the draining quinoa with cold water. This stops the quinoa from getting softer, drops its temperature right down and stops it sticking together in a big gloopy mess. This means you can make your salad straight away.

At this point, all you need to do is combine your ingredients and enjoy.

Super quick and easy right?

I love to make this the night before during the working week as something to really keep me going. Just pop it in an airtight container and your ready to go. You can also add your favourite salad leaves to make this portion go further and feed 2 people.
