Autumn Baking- Duffins

The leaves are turning, the air is cooling and the world smells like pumpkins and bonfires…it’s AMAZING!!!

With all of this comes the need for staying home and curing up with Hot Chocolate after a nice long walk. Now all you need is something super seasonal and tasty to go with it.

Duffin: A doughnut, muffin hybrid that makes for the perfect hot chocolate companion of the autumn.

So, lets get started……

What you will need:

175g Butter, 200g Caster Sugar, 2 Eggs, 375g Self Raising Flour, 3/4 tsp baking powder, 1/4 tsp bicarb, pinch of salt, 1/2 tsp nutmeg, 250ml milk

As always, before we get started, it’s time to turn the over up to full…..we need a nice fluffy Duffin so you need that heat to give a good lift!

Now, beat the butter and sugar together.

Once this is all done add in the eggs and half the sifted flour, bicarb and spices.

Add in the milk with the remaining flour.

Drop your oven down to 180 to set the perfect temperature!!

Poor mixture into silicon cases and make for 15-20 mins.

Once baked pop them out of the cases and leave them to cool.

Once cooled, it’s time to make these guys all sugary and yummy.

Topping:

100g caster sugar, 1tsp cinnamon, 25g butter (melted)

Now, this is the best bit……dip the duffin in butter, and roll them in the spiced sugar mix!

So, that’s it. Time to sit, watch the leaves and rain fall and stay warm with these sugary delights.

They will keep up to 2 days, after that they get to be a bit stale. After that it’s time to serve them warmed with ice-cream…..or dipped in hot coffee!
