Lunch Prep: Roasted Chickpeas Recipe

In The House of Lotz we have a bit of an evening ritual for making lunches for the next day before we go to bed. It is something new that The Boy has gotten into, but I have been doing this for many many years now.

Over the years I have gone through phases with different foods. At the moment I am plant based during the day and I have a little bit of meat in the evening. This is just what works for me at the moment with my current set of health issues. Things might change, but at the moment I am running with it until everything falls apart!

Anyway……my current obsession is chickpeas and everything related to them! Over the last month I have been experimenting with these little guys and discovered that roasting them is probably the best thing you can do with them!

Trust me…..you won’t regret it……

You will need:

1 can chickpeas

2 tbs paprika

2 tbs dried herbs

1 clove garlic

1 tbs oil of your choice

Any veggies that are knocking around the bottom of the fridge that you fancy using up

Salt and Pepper to taste

As with all of my recipes…..whack you oven up to full blast to pre-heat.

Whilst your oven is warming, drain your canned chickpeas and rinse them in the sink.

As these now very wet chickpeas, leave them in the sink for a bit. Take this time to chop up your random veggies into pieces, making sure that everything will cook evening.

Pop all your veggies and chickpeas in a roasting pan. Give them all a little mix and add your seasoning.

Mix again and add your oil. This way everything will get super crispy….and you get some yummy burnt bits on the bottom of the pan.

Drop your oven down to 180 and roast for about 35 minutes.

After 30 mins, give them a bit of a shake and a poke. If you chickpeas are crispy already, take them out the oven. If not leave them in for another 5-10 mins.

You can eat these straight out the oven or you can leave them to cool and have them for lunches or snacks during the work week.

The little batch I am keeping in the fridge until Monday to have as a salad. The rest are being munched on Tuesday as lettuce boat things with guacamole.
